Smoked Bloody Mary With Grilled Garnishes

Start your morning in style with a Traeger-smoked Bloody Mary. The grilled garnishes are delicious enough to steal the show.

Ingredients
  • Roma Tomatoes, sliced into 1/4″ rounds

  • salt and pepper

  • 2 Tablespoon Traeger Beef Rub

  • 10 Slices bacon

  • 1 Jar Asparagus, pickled

  • 1 Jar Green Beans, pickled

  • 1 Jar Pepperoncinis

    Smoked Bloody Mary With Grilled Garnishes

  • 1 Jar vermouth soaked cocktail onions

  • cherry tomatoes

  • 1 Jar mixed olives

  • Mushrooms, fresh

  • Shrimp, grilled

  • Lobster Tail, grilled

  • Celery, stalks

  • Bamboo Skewers

  • 3 Cup tomato juice

  • 3 Tablespoon Worcestershire sauce

  • 2 Teaspoon prepared horseradish

  • 5 Teaspoon hot sauce

  • 1 Whole lemon, juiced

  • 2 Whole lemon wedges

  • Traeger Bloody Mary Cocktail Salt

  • ice

  • 1 1/2 Fluid Ounce vodka

When ready to cook, set the grill temperature to 275℉ and preheat, lid closed for 15 minutes. Cut tomatoes in quarters and remove stems. Place a metal rack over baking pan and put the tomatoes on the rack. Season with salt, pepper, and Traeger Beef Rub. Place the baking pan and rack with tomatoes on the grill. For the Smoked Bacon: Place bacon directly on the grill grate next to the tomatoes and cook until bacon is crisp, about 60 minutes. Bacon should be crispy so it will stand up when used as a garnish in the cocktail. After 1 hour, remove bacon and tomatoes from grill. Remove skin from tomatoes, set aside and let cool. Increase the grill temperature to High and preheat. Brush skewers with olive oil and place directly on the grill. Grill for 5 minutes per side or until grill marks form. Remove from grill and set aside to cool.

For the Bloody Mary Mixture: Transfer peeled tomatoes to a food processor and pulse until puréed. Add tomato juice, Worcestershire, horseradish, hot sauce, juice of 1 whole lemon. Season with salt and freshly ground black pepper to taste. Pulse again to combine. Rim a pint sized glass with a lemon wedge, then dip it into the Traeger Bloody Mary Cocktail Salt. Add ice cubes to glass, then vodka and top with the Bloody Mary Mixture. Stir gently.

To build the Smoked Bloody Mary, place a lemon and a lime wedge on each rim to garnish. Add smoked bacon, grilled pickled vegetable skewers, and celery stick to cocktail. Serve immediately. Enjoy!
